Whoa...like WHOA! I can't believe that a native yeast could be that robust! You grow them strong in those parts...

Is that Mourvèdre, by any chance? Also...wouldn't a tendency to overheat act as self-limiting (-- a little knowledge...you know) umm whatever & prevent this?

No Siree D...that is Petite Sirah. The problem with a ferment overheating is that it has a tendency to severely damage the yeast population to the point where it cannot finish out a ferment. That often happens when the ferment gets up over 100 degrees or more. HOWEVER the thermometer on that tank read only 83 degrees. And FURTHERMORE, a sample out of the center of that roaring behemoth read at 92 degrees. Which is within acceptable limits for a peak fermentation.

The fact that it has done this is neither here nor there...although I am somewhat of a newbie with native yeats fermentations. The ferment seems to have only suffered from a roughly 20 gallon volume loss. The correct answer to your question is...wait for it...I dunno! But I'll endeavor to keep you posted.

I feel like an idiot-- love Mourvedre, must've been delirious, back o'my head I *know* M- is a notorious late-ripener...
Thanks for sharing! Way cool. Only theoretical prob w/ a *hot* ferment
(--so up to 99ºF won't kill th yeasts & process pushes through?)
--as I remember, is losing aromatics, though fruit gets pumped up, right?
